Salmon Patties

1 cup red salmon (about 1 can), with liquid
10 soda crackers, crushed
2 eggs
cornmeal, flour, or pancake flour to coat
shortening, melted--enough to be 1/4-inch deep in frying pan*

Pour salmon and liquid into bowl. Add eggs and crushed cracker crumbs; mix well. Make into small patties. Roll in cornmeal, flour, or pancake flour. Fry in 1/4-inch hot shortening. Turn when brown.

Serves 6.

* If use a small frying pan, can use less shortening.
