Pork Ribs with Apple Butter Sauce

4 pounds country-style pork ribs
1 (14-ounce) jar apple butter
1/2 cup water
1/4 cup vinegar
3 tablespoons lemon juice
2 teaspoons prepared horseradish
1 teaspoon prepared mustard
1/2 teaspoon celery seed
1/2 teaspoon garlic powder
1/2 teaspoon sugar
1/2 teaspoon salt
1/8 teaspoon pepper
dash ground red pepper
dash ground cumin


Cook ribs, covered, in enough boiling salted water to cover for 45 to 60 minutes or until tender. Drain well; season ribs with salt and pepper. Combine remaining ingredients in saucepan. Bring to boiling; reduce heat and simmer uncovered 25 minutes or until reduced to 2 cups, stirring occasionally. Grill ribs over SLOW coals for 45 minutes, turning every 15 minutes or till done.
