Potato Chip Ham Casserole

4 tablespoons butter or margarine
4 tablespoons flour
2-1/4 cups milk
1-1/2 cups minced, ground, or finely cubed ham
2 cups slightly crushed potato chips
[1 can sliced or pieces of mushrooms, opt.]

Make white sauce of butter, flour, and milk. Cook until smooth. Add ham and pour into greased casserole. Top with thick layer of potato chips. Bake in 350 degree oven for 30 minutes. Serve hot. The addition of mushrooms to the cream sauce enhances the flavor of this dish.

[Could substitute cream of mushroom soup reconstituted with milk to equal 2-1/4 cups for the white sauce and mushrooms.]

[Number of servings not given, but probably serves 4.]

[clipped from potato chip box]
