Giblet Stew

giblets
[oil for browning]
onion, chopped
celery, chopped
carrots, diced
salt
pepper
pinch of nutmeg
flour or corn starch

Brown giblets in Dutch oven. Add rest of ingredients except flour. Cover with water and simmer 1-1/2 to 2 hours. Thicken with flour or corn starch.
