Rice Porkupines

1 pound ground beef
1/2 cup uncooked rice
1 teaspoon salt [plus more to taste]
1/8 teaspoon pepper [plus more to taste]
1 No. 2 can tomato juice
1/2 medium onion, sliced
1/2 green pepper, sliced
1 tablespoon fat [lard, shortening, or oil]
dash of nutmeg

Mix together ground beef, rice, 1 teaspoon salt, 1/8 teaspoon pepper and nutmeg. form into small balls about 1-1/2 inches in diameter. Place in covered baking dish. In a skillet, saute onion and green pepper in 1 tablespoon fat. Add tomato juice and season with salt and pepper to taste. Pour over porkupines and cover baking dish. Bake at 350 degrees F. for 1 to 1-1/2 hours.

Serves 8.
