Meatless Lasagna

1 (8-ounce) package Creamette Lasagna
3 tablespoons butter or margarine
1/2 cup onion, chopped
1/2 cup celery, chopped
1 (28-ounce) can tomatoes, broken up, undrained
1 (6-ounce can tomato paste
1/2 cup water
1/2 tablespoon dried basil leaves
1/2 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon pepper
1 (16-ounce) can mixed vegetables, drained*
1 pound Mozzarella cheese, grated

Prepare Creamette Lasagna according to package directions; drain. In medium sauce pan, melt butter; saute onion and celery until tender. Add tomatoes, tomato paste, water, basil, sugar, salt, and pepper. Simmer 15 minutes. In 3-quart shallow baking dish, layer lasagna, vegetables, sauce, and cheese. Repeat layers. Bake at 350 degrees F. for 30 minutes.

Serves 8 to 10.
